Salad & Soup Recipes

Classic Caesar Salad


2 large    Egg Yolks, pasteurized

1/2 clove Garlic, peeled

1/3 cup   Parmesan cheese, grated

3 TBSP   Lemon Juice

1              Anchovy Fillet

1/2 tsp     Salt

1/2 tsp     Dijon Mustard

To taste   Black Pepper, ground 

1/2 cup    Ultra-Premium Extra Virgin Olive Oil

1 cup       Croutons

6 hearts  Romaine Lettuce, washed, dried and roughly chopped or left whole


Place all ingredients except for the lettuce into the bowl of a blender or food processor and secure lid.   Process for 20 seconds.

Drizzle the dressing on the lettuce, add croutons and more grated Parmesan.
