White Balsamic Vinegar, developed for chefs so as to not color their dishes, is a clean, crisp cousin of our 18-year aged Dark Balsamic Vinegar. Also from Modena, Italy’s finest grape must, the biggest difference between the two is aesthetic: White Balsamics are cooked at lower temperatures to retain their clear coloring, and aged for less than a year to avoid thickening. Still sweet and potent enough to be dripped onto a dish as a condiment and balanced enough to pair with our olive oils for a salad dressing, this balsamic is perfect for light summer recipes or to add a bit of flavor to your seltzer.
Haphazard streets wind past brightly-colored yellow, orange, and pink buildings, the spire of the Torre Ghirlandina peering above their walls over your head. The tradition of Balsamic Vinegar here in Modena, Italy is sacred and the city’s pride in their craft is evidenced everywhere. In the archives of Modena, on public view, is a wine list from a secret Ducal cellar dated 1747 and balsamic vinegar is listed alongside the wine. There are writings from 1508, recalling balsamic vinegar in the court of the Duke of Modena, who was Lucrezia Borgia’s husband. The first Balsamic Vinegar was documented almost a thousand years ago in 1046 here in Modena, and that process, created all those years ago and demarcated by the essential word “tradizionale” or “traditional”, is the same process we use for ours.

From where you’re standing, Lake Michigan is bright blue, reflecting the sky like a mirror -- a spring snowfall covers the ground, but upon closer inspection reveals that it isn’t snow: it’s loose petals from the orchard that stretches all the way downhill to the bright stripe of sand at the lake’s edge. Cherry blossoms from the orchard’s trees waft a sheer lilac and rose-like aroma towards you, accented with soft almond and creamy vanilla. The ripe black cherries that will fall from these trees in a few months are rich, sweet, and full of tart flavor. In this balsamic vinegar they are the perfect tart accent for a sweet meal, or sweet accent for a savory one. This vinegar is especially good on salads that feature cheeses: feta, goat, and blue cheese are the perfect compliment.$ 5.95

The forest brush is low and sparse, but the canopy is an endless stretch above: a cathedral of trees as tall as skyscrapers. As you tilt your head as far back as it will go, hoping to catch sight of the lowest branches of the giant redwood tree before you, a brush tugs gently at your pant leg. Wild blackberries cast juicy purple splashes on the denim of your jeans, and soon stain your hands as you stoop to pick them. The ripeness of wild blackberries, sprawled as they are on the forest floor, sends a sweet scent to your nose. This flavorful, fruity dark balsamic combines the irresistible dessert sweetness of Blackberry with the bright spiciness of ginger for a flavor you won’t find anywhere else. Perfect for making compotes, drizzling over fruit, or with walnuts and goat cheese on a salad.
