Our olives are grown and pressed by artisan farmers in organically focused farms from around the world. These olives are harvested green and pressed within 4 hours of harvest resulting in the freshest, highest quality, Ultra-Premium Extra Virgin Olive Oils. We strongly believe that Extra Virgin Olive Oil is like fruit juice: highly perishable, healthier and more flavorful when consumed fresh. Therefore, we post the Harvest Date on our Ultra-Premium Extra Virgin Olive Oils so that you can be sure of the freshness of our products. In addition to the insuring the freshness of our oils, we are extremely fanatical when it comes to the "chemistry”of olive oils. We post several chemical measures of our olive oils so that our customers may gather different aspects of the product, including the polyphenol count which dictates the flavor intensity, Free Fatty Acid which measures the smoke point of the oil, Oleic acid which predicts the mono-unsaturated fat levels in the oil.

Our infused oils start with a base of one of our Ultra-Premium Extra Virgin Olive Oils. Natural botanicals are added to this base in a highly controlled environment to produce infusions with intense flavor and no preservatives or additives.  

We also carry a selection of fused oils which are made in the Argrumato method where fresh olives are pressed together with fresh fruits/herbs/chilis, resulting in an intense burst of flavor without compromising the quality of the olives.
