Directions:
Preheat oven to 400 degrees F.
Pat filets dry with a paper towel, then tie each filet around the middle with string so it holds its shape when cooking. Brush the filet with INFUSED Robust EVOO, sprinkle with INFUSED Wild Porcini Mushroom Sea Salt and pepper.
Heat a large skillet over high heat for 5-7 minutes. Once the skillet is hot, add the filets and sear evenly on all sides (about 2 minutes for each top, bottom and sides). Transfer the filets from the skillet to a sheet pan and place in the oven for 8-10 minutes for medium rare. Remove from oven and cover with aluminum foil to all them to rest for 10 minutes.
While the steaks are cooking, heat INFUSED Butter Olive Oil in a small saute pan over medium to low heat. Saute mushrooms for 4-5 minutes, stir in the sherry and continue cooking for 8-10 minutes until mushrooms are cooked thoroughly. Sprinkle with salt and pepper and set aside.
Using the same skillet that you seared your filets, heat the INFUSED Tuscan Herb Olive Oil, add shallots and cook over medium to low heat for about 2 minutes. Add brandy and stir to deglaze the pan. Cook until brandy evaporates and the shallots are tender. Stir in heavy cream and simmer until thickened. Finish by adding the mustard and season to taste.
To serve, spoon the cream mustard sauce around the filet. Top meat with a spoonful of mushroom, garnish with minced parsley and serve hot.

Directions:
Preheat oven to 375°F.
Grease an 8-inch round baking pan with a teaspoon of INFUSED Blood Orange Olive Oil. Line bottom with a round of parchment paper and grease the paper with another teaspoon of the INFUSED Blood Orange Olive Oil.
Using a double boiler, melt finely-chopped chocolate with remaining INFUSED Blood Orange Olive Oil. Remove from heat and whisk in the sea salt, sugar, and INFUSED Indonesian Vanilla Extract in Cane Rum.
Add eggs, one at a time, whisking well after each addition.
Sift the cocoa powder over the chocolate and whisk until just combined.
Pour batter into prepared pan and bake in middle of oven for 20-23 minutes, or until top has formed a thin crust.
Cool cake in pan on a rack 5 minutes and invert onto a serving plate. Drizzle cake with a small amount of INFUSED Blood Orange Olive Oil or dust cake with additional cocoa powder and serve with tangerine sorbet, whipped cream, or vanilla gelato.

2 cups | Sourdough Bread Crouton (1 inch dice) |
¾ cup | INFUSED Lemon Stuffed Manzanilla Olives |
2 med | Red Onions, cut into wedges |
1 | Red Bell Pepper, cut into 6 slices |
1 | Green Bell Pepper, cut into 6 slices |
1 | Yellow Bell Pepper, cut into 6 slices |
1 | Lemon, sliced thinly |
2 TBSP | INFUSED Greek Bread Dipping Blend |
1 tsp | Paprika |
5 TBSP | INFUSED Milanese Gremolata Olive Oil |
4 | 6 oz Salmon Fillets, skinless |
2 TBSP | Fresh Parsley, chopped |
To Taste | Kosher Salt & Fresh-Ground Black Pepper |
Directions:
Preheat oven to 375 degrees F.
Line the baking sheet with parchment paper.
In small bowl, combine INFUSED Milanese Gremolata Olive Oil with seasonings.
Put crouton, olives, onion, and peppers on the baking sheet. Toss with 3 TBSP of the seasoned oil, reserving the remaining seasoned oil for the salmon fillets.
Bake for 15 minutes.
Rub remaining 2 TBSP of seasoned olive oil on the salmon fillets and arrange them among the vegetables and croutons on the baking sheet. Bake until the salmon is cooked, another 12 – 15 minutes.
Garnish with chopped parsley and serve.
